Job Description

The French Specialty Chef is responsible for delivering refined, authentic French cuisine that reflects the elegance and high standards of the Secrets brand. This role leads the French restaurant or designated culinary outlet, ensuring exceptional quality, creativity, and presentation while providing guests with a sophisticated and memorable dining experience.

Key Responsibilities

Culinary Expertise & Food Preparation

  • Prepare and present classic and contemporary French cuisine with a focus on authenticity, technique, and presentation.
  • Develop and periodically update menus in collaboration with the Executive Chef, incorporating seasonal and high-quality ingredients.
  • Ensure consistency in flavor, plating, and portion control across all dishes.
  • Execute advanced French culinary techniques (e.g., sauces, pâtisserie basics, braising, roasting, and fine plating).

Experience and skills desired

  • Formal culinary training with a focus on French cuisine preferred.
  • Minimum 5–8 years of experience specializing in French cuisine in fine dining restaurants, luxury hotels, or resorts.
  • Strong knowledge of classical French cooking techniques and modern culinary trends.
  • Experience in high-end or all-inclusive resort environments is highly desirable.
  • Excellent knife skills, plating techniques, and attention to detail.
